The Food Science and Technology Bulletin is a new electronic peer-reviewed journal offering easily absorbed current information to busy food professionals. It provides concise, up-to-date minireviews on developments in key areas of food science, food technology and food-related human nutrition. The Bulletin consists of at least eight new minireviews a year. Each minireview, of approximately 5000 words, is written by a scientist, who is an expert in their field of research. The Bulletin will cover distinct themes in food science and technology. The first of these is Functional Foods, under the editorship of Professor Glenn R. Gibson of the University of Reading. Future themes are planned to cover topics such as Food Safety, New Technology and Food Biotechnology.
