Food Additives and Contaminants publishes original research papers and reviews covering analytical methodology, occurrence, persistence, safety evaluation, detoxication, regulatory control and surveillance of natural and man-made additives and contaminants in the food chain. Contributions cover the chemistry, biochemistry and bioavailability of these substances; factors affecting levels of potentially toxic compounds that may arise during production, processing, packaging and storage, and in the development of novel foods and processes; surveillance data and exposure estimates.
